Head to this small town just outside San Sebastian for the sagardotegi (cider house) ritual. You drink directly from massive wooden barrels when the owner shouts 'Txotx!' and eat a fixed menu of cod omelet and massive ribeye steaks. It is loud, social, and very Basque. Book a guided tour including transport so you don't have to drive. Spend three hours here, wear comfortable shoes for the damp floors, and skip a heavy breakfast.
